Pumpkin Muffin Recipe

Pumpkin Muffins:
-Cut 1 pie pumpkin in half and scoop out the seeds. 
-Roast at 350 face down in the oven for 1 hour and 15 minutes until very tender. Allow to cool. 
-Scoop out flesh and then stir well to blend. 
-Preheat oven to 400°F with rack in middle. 
-Butter or oil muffin pan if not nonstick. 
-Meanwhile, whisk together 1¼  cup whole wheat flour, 1 cup oats, 2 tsp baking powder, ¼ tsp baking soda, 1 heaping tsp ground cinnamon, 1 tsp ground ginger, ¼  tsp ground allspice, ¼  tsp ground cloves and ½ tsp salt in a large bowl. 
-In a separate bowl, whisk together 1 stick melted butter, ¾ c. brown sugar, 1½-2 cups pumpkin puree, ¼ cup Greek yogurt, 2 large eggs and 1 tsp vanilla. 
-Add to dry ingredients and stir until just combined, then stir in ½ cup cranberries and 2 TBS pumpkin seeds or walnuts. 
-Divide batter among muffin cups. Bake until a wooden pick comes out clean, about 20 minutes. 
-Cool slightly on a rack.

Finished the practice wedding shawl, and got a pretty wedding dress!  I gave the practice shawl to my mom, and asked her to wear it for the wedding so we can kind of match and she loved it!  Worked a bit each on the baby sweater, socks and am currently swatching for the Cassidy cardigan for the Knitmore KAL!
~Spinning:
Finished the spinning for the Tappan Zee cardigan!  Yarn is now drying after being set last night! Can't wait to start knitting it!

The wedding dress I picked out (Alfred Angelo Style 2100 if you want to check it out) is awesome!  The dress on the rack fit me perfectly, there was NOTHING wrong with it, the color is perfect so we got the one off the rack!  Because a few people have tried it on, we got a 15% discount on it! Yay!

I LOVE IT!  Softens a ton when you wash it, I've never found a knot (I've knit with this a lot).  Takes dye really well, and most importantly, it is such an awesome value!  Its a really good workhorse yarn and I love it!

  SO MUCH KNITTING!  Still working on Baby Cabled Raglan Cardigan for sis's baby, finished the fingerless mitts I started 2 weeks ago, cast on a baby hat and still knitting on the Bumbling Smooshy socks!  Going to cast on soon for the Flicka Hat from the Knitter's Book of Wool, using some Abstract Fiber Colorwork and the Falling Stars Cardigan from KnitPicks!
~ Spinning:
  Almost done with the BFL for the Handspun Tappan Zee! I love BFL!! Already done with Cormo, next up is SW Merino!  Yay!  Also, yesterday I worked at the Schaefer Meadows Fiber Festival in the Sunset Fibers booth, and in exchange for me working, Linda gave me a Jenkins Turkish Delight spindle!  I also got a pound of Jacob fiber which I am planning to spin and knit for Aaron! He wants fingerless mitts and a headband... :/

I got some sock yarn from JoAnn for Buy one get one half off (total: $7.50) instead of buy 2 for $9 because I paid attention to the ad!
~Worth It!
Clover 9" bamboo circular needles.  Retail: $14.99
The needle tips are only about 1 1/2 inch, I had to hold my needles differently which affected my gauge, and my hand cramped up! I would never recommend these to anyone and I will probably take them back and get my money back.  Terrible, not worth it at all, even half price!

I've actually been doing some!  I'm going to spin 3 different colors together and knit the Tappan Zee!

Laugh until it hurts!  I've noticed that I am less inclined to make an impulse purchase if I'm feeling really good, so do something that makes you really happy and laugh until you cry!

  I made salsa instead of buying it, made muffins and tea instead of going out to a coffee shop and used free yarn to make a cute sweater!
~ Worth It!
 The Expectant Knitter by Marie Connolly
Retail: $27.50, 30 patterns
Pros:
I like the patterns, lots of top down seamless stuff, lots of really practical baby things and the patterns are well written and the photos are lovely.
HOWEVER: The author inserts MEDICAL ADVICE into the book, which is absolutely inappropriate.  If it was just a book of patterns, it would totally be worth it, but as it is, I would not buy it.  A library book for sure.
